This is an easy recipe that I found online, but I don't remember where to give credit where credit is due. I just googled quinoa recipes and found this one. It's pretty easy to make and super yummy. The whole family loved it and it was still yummy heated up the next day.
Quinoa & Black Beans
1 tsp. vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth (I used chicken broth because...that's what I had)
1 tsp. ground cumin
1/4 tsp. cayenne pepper (I couldn't find mine.....my kitchen isn't put back together all the way just yet)
salt and pepper to taste
1 cup frozen corn kernals
2 (15 ounce) cans of black beans, rinsed and drained
1/2 cup chopped fresh cilantro
Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic and saute until lightly browned.
Mix quinoa into saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt and pepper. Bring to a boil and cover. Reduce heat and simmer for 20 minutes.
Stir in frozen corn and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
This is probably intended as a side dish but I served it as a meal. We also added a little shredded cheese on top. The girls loved it. CG loved it. I loved it. And, it's super healthy. The only problem is that I paid over $6 for 12 ounces of quinoa, so it's kinda pricey. Hopefully I can find it less expensive somewhere else. So, if anyone knows of a more economically priced quinoa, please feel free to share!

Quinoa is a grain from South America, but it's high in protein as well. I just bought it at Macey's in their organic area, but I wonder if I could get it at a better price at a health food store.
I know it sounds weird, but it's yummy. And good for you!
We LOVE quinoa. But then we live in California, so we eat such things out here. I'm afraid that by "we" I mean my husband and I, not my son, who actually makes gaggy noises when faced with it. But I persevere.
Anyway, I buy the quinoa from the bulk foods bins at the Whole Foods Market. It's a national chain, but they're probably not everywhere. I'm sure they're online.If you buy in bulk it's pretty cheap.
