This weeks recipe (months?) is for a yummy summer pie. It's super easy and can be made for just about any occasion. It really can. It's s'more pie and can be "cooked" on the grill, in the oven, in a camp fire (if you're careful) or in the microwave if it's in an appropriate dish. It's supposed to be the pie version of s'mores and less sticky. I'm still not convinced that it's less sticky, but it is easier to make. I originally found the recipe sometime last summer on some kind of paper. It could have been a magazine or who knows what. I didn't cut the recipe out because, well, it has marshmallows, chocolate chips and graham crackers. How hard is it to remember that?! We tried it out this past weekend and it was super yummy.
S'more Pie
Mini Marshmallows
Chocolate Chips
Graham Crackers, broken up into small pieces
First, layer the graham cracker pieces on the bottom of the pie tin. Then layer marshmallows and chocolate chips. Here's a picture of the first layer.
Follow with a second round of graham crackers, marshmallows and chocolate chips. I only did 2 layers, but it would be pretty easy to do 3 layers since they shrink during "cooking". This is a picture of the 2 layers of ingredients.
After you have layered until you just can't layer anymore, pop it in your grill, oven, fire, microwave or whatever and let it "cook" until the marshmallows are slightly browned and the chocolate is melted. Here is our final product.
I've only made this pie the one time, but when I make it again I think I'll do more marshmallows and chocolate. And possibly another layer because I was surprised by how much in shrunk. Plus, the point of the s'more is the marshmallow and chocolate. The graham cracker is just the means of getting the important ingredients into your mouth. Clearly we need more marshmallow and chocolate.

Our Animals Don't Like Us Anymore
That's kind of how I'm feeling right about now. Our beautiful cat Lucy has now added pooping in random places to throwing up the entire contents of his stomach at any given moment. It's a good thing he's pretty because he can be a little high maintenance. I knew about the throwing up before he came to live with us, although it has gotten worse. I got him in high school so we go way back. Which is why I keep cleaning up after him.
But now, it's Dexter. Not only does he keep running away whenever he gets the chance, but now he's getting in on the poop action. Yes, you read that right. My perfectly healthy golden lab pooped throughout the basement today. Lovely. He doesn't have old and feeble as an excuse. I'm not sure what his problem is though I'm starting to wonder if he's having issues with getting scooted further and further down the totem pole of life. I'm assuming he thinks its poopy.
The poop. The poop is getting to me. And let's not discuss potty training right now either. I just don't have it in me. But if you come to my house, be careful where you step.....

Technology is a beautiful thing. Beautiful. And I just can not seem to keep up with it! Blogging, Vlogging, Facebooking, Tweeting.....it's all fabulous. And yet I can't keep up! How do you do it?! No really, HOW DO YOU DO IT ALL?!?!
I really enjoying blogging, but does anyone actually remember the last time I posted anything even mildly entertaining? Anyone? Buehler?! I enjoy Vlogs. Other people's Vlogs. I don't Vlog. The beauty of a blog is that I don't have to be a beauty to write it. I can write in my jammies. Without make-up. Or basic personal hygiene. I probably couldn't Vlog in my jammies. Plus, with a Vlog, you'd be able to hear my voice. And let me tell you, it's not a pretty sound. Kind of like Minnie Mouse. On helium. And probably with a funny accent that everyone but me can hear. Last night a telemarketer started laughing when I told him how old I was because he didn't believe me. But I figure that even though I won't look young forever, at this rate, I will sound young forever.
The thing I love about Facebook is reading people's updates. I try to come up with clever updates but I usually end up talking about our dog running away or carpet. Riveting. And Twitter. Seriously, I'm the biggest dork on Twitter. I think it's distinctly possible that I'm just not getting it. Twitter is just not that into me.
I think I need a Technological Intervention.
On a completely unrelated note, my face still hurts. Is it supposed to still hurt a week later? Is that normal? I really don't know. But it is annoying.
Sometimes I wonder if I might possibly be a little ADD.

An Abscessed Tooth is SO Much FUN!
It's been a while since I talked about my teeth. I bet y'all have been wondering just what they have been up to. Because my teeth are exciting and oh so newsworthy.
I have one molar left on the bottom left side of my jaw. And it's kind of broken. And has been for a while. This is the third time it's abscessed. The THIRD time. For the love of ALL THAT IS HOLY!!!
Tomorrow I'm having it pulled. Then I'll have to get dental implants so that I actually have molars on the bottom half of my mouth for to chew. Because I'm fancy like that. I'm seriously thinking about getting a t-shirt that says "I have implants" across the front. We'll see if that actually happens.
On the bright side, you don't need teeth to eat ice cream.

Friday Favorite-The Freedom To....
The freedom to knock holes in your walls.....2 hours before you're supposed to be at a family BBQ. Making us run a little late. But it's okay because it gives us more freedom than you can imagine.
The freedom to celebrate the birth of our country and our niece.
With squirt guns aimed at Daddy.
And water balloons. Also aimed at Daddy.
And swings.
And a pinata.
The freedom to make hair clippies on Sunday afternoon upon realizing that my girls didn't have 4th of July hair clippies.
The freedom to hoard craft supplies even though I have no organized place to keep them in order to make the above clippies possible.
The freedom to make a yummy dinner. The blessing to actually have healthy and not-so-healthy food to feed my family.
The freedom to enjoy fireworks with family and friends. And licorice.
The freedom for my girls to live life to the fullest.

Recipe Swap Wednesday-Summer Bean Salad
Aahhhh....the much anticipated bean salad recipe. I first got to try it at the EVO conference closing social that was sponsored by Bush's Beans. To be honest, I'm not a big fan of bean salads, but I loved this one. So I'm sharing. You're welcome.
Summer Bean Salad
2 cans black beans, rinsed and drained
2 cans cannellini beans, rinsed and drained
2 cans pinto beans, rinsed and drained
1 can (4 oz.) chopped green chilies, do not drain
1 jalapeno chili pepper, seeded and finely chopped (optional)
1 red bell pepper, cored, seeded and finely chopped
1 green bell pepper, cored, seeded and finely chopped (I used 2 green peppers because the store was out of red peppers)
1 small red onion, finely chopped
2-3 stalks celery, finely chopped
1 bunch cilantro leaves, finely chopped
1-2 avocados, chopped (optional) (not optional in my opinion)
Dressing
1/2 cup rice vinegar
1/2 cup olive oil
1/3 cup white sugar
1/2 teaspoon garlic powder
1/4 teaspoon cumin
In a large bowl, mix the above ingredients together.
To make the dressing, mix the ingredients together in a saucepan and stir. Bring to a boil, then remove from heat and cool.
Pour dressing over the bean mixture and toss.
Enjoy!
