Today's recipe is for zucchini bread. It's a recipe that I got from my sister in law that I've altered a bit to make it a tiny bit healthier. Because I'm a health nut. It's not quite healthy enough to serve as a vegetable, but it's a yummy treat anyway. Especially during the season where zucchini is plentiful. Like right now. I've actually shredded our zucchini and put it in the freezer to make the recipe this winter.
Zucchini Bread
3 eggs (you could use egg substitute to make this completely fat free)
1.5 cups sugar
2 cups raw, shredded zucchini
1 cup applesauce
1.5 cups wheat flour
1.5 cups white flour
1 tsp. baking soda
1 tsp. salt
2 tbsp. cinnamon
Combine all ingredients. Beat lightly until mixed. Bake in two prepared loaf pans at 325 degrees for 60-70 minutes. If you choose to make muffins instead, bake for about 25 minutes.
Enjoy it while it lasts! Because it will go quickly!

Oh, you and my mom would be best friends. She is the zucchini queen and makes the most delicious zucchini brownies! I will have to steal some of her zucchini shreds and make this bread.
this may SOUND gross, but trust me when I tell you how GOOD IT IS!
Add chocolate chips. YUMMMMMMM
